Giving Thanks

Happy Thanksgiving!

I can honestly say that this year’s holiday meant more to me than any other Thanksgiving Day in my life. I have lived through the hardest year of my life, and yet I am feeling more thankful now than I ever have. I guess when one faces low points in their lives, they realize just how high the good times really are… and for that lesson I am grateful.

We spent Thanksgiving by ourselves which was different and in a normal year it just wouldn’t feel right not having family or friends to share the day with, but this was of course not a normal year so spending it with just us was perfect. I told everyone they could pick one dish for the menu, but they had to help make it. We had everybody contribute to our Thanksgiving meal this year and it was really fun having everyone in the kitchen helping to cook their favorites!

My list was very long of things that I am grateful for, in addition to the obvious, I was grateful to have a day where I gave myself permission to eat some regular food (turkey, lamb, scallops, mashed potatoes, green bean casserole, and bread!

Unfortunately, the Cowboys didn’t show up yesterday despite us cheering them on with our jerseys.

Today I am back on to my veggie juice feeding plan. This is what today’s menu looks like:



Eating this way is getting easier and my sweet friend Michele is going to do some meal sharing with me next week to help me out. Both of our families don’t love leftovers, so if she cooks a little extra then both families are happy and no LOs!! I loved her brilliant idea as it has been a hard adjustment trying to cook for my family and feed myself. I fondly call it “feeding” because every time I eat, it is certainly with purpose to nurture my body and not for pleasure.

My next PET scan is December 14, that will truly be a turning point I believe. Existence of CAR-T cells is minimal to non-existent at this point, so if I am stable or better then it is a miracle, healing naturally and not via conventional medicine.

I am happy to have my life back and thankful to the family and friends who continue to encourage, support, and pray for us.

On this Thanksgiving holiday I am most thankful for my savior Jesus Christ whom I have put my complete faith and trust in. He has given me hope and been true to His word.

“Blessed are those who trust in the Lord and have made the Lord their hope and confidence.” Jeremiah 17:7
